Thai Coconut Soup Tom Kha Gai

Here is the Thai Coconut Soup with some additions of my own.
A filling and addictive meal!


For 2 portions, I soak say
1/3 C of cashews over night that I rinse
1/3 C coconut oil
2 dates minced or soaked a while
juice of 1 lime
2 1/2 C water
1/2 fresh red chill, minced
1-2 cloves of garlic minced
salt
pepper

mix!

Then pour over

thinly sliced noodles of 1/2 zucchini or cucumber
2 celery stalks thinly sliced
1 julienned/matchsticked carrot
1/2 onion thinly sliced the sweet way from top to root
1 chopped avocado
a bit soaked arame algae
chopped wild greens (dandelion leaves, spinach etc)

Top with

red chilipepper flakes
8 sliced plum tomatoes
lots of cilantro
