Tomato Basil Celery Carrot Soup


So delicious and quick! I got this recepie from Lisa Viger of Raw on $10 a day.

Cut into pieces and mix per person:

1 large tomato
1 medium size carrot and or pumpkin
1 celery stalk with leaves
1/2 small onion
1 tsp dried basil
2 tbsp olive oil
salt
black pepper
water

to almost cover the contents, to say 5/6
so it's thick and creamy when ready mixed

sprinkle with red pepper flakes
decorate with basil
other favourite greens

or as here dried wild mushrooms

Kombucha!!!



This delicious and powerful, naturally fermented, probiotic immortal health elixir
 is over 2000 years old  and from China.
It is full of antioxidants that boosts your immune system, B-vitamins and detoxing enzymes
 and bacterial acids that can be cancer preventive.

A  Scoby - Symbiotic Culture Of Bacteria and Yeast - is used.
Get your scoby from a friend, of the internet or ask me.

Make 2.7 l of black tea. Use 15g of tea (8 teabags). Let it steep for 20 min.
Stir in 1.8 l of organic sugar.
Pour it in a 3l very clean, boiled hot water rinsed jar, with your very clean hands using very clean utensils. Clean them in boiling hot water.
3l jars for 45kr at ÖB Kungens Kurva.
Let it cool to room temperature.
Slip your Scoby into it's sweet tea bath with 1 1/2 dl of old kombucha.
Cover with a woven cloth for breathing.
Let it sit in room temperature, out of direct sunlight for 2 weeks to ferment.
 Or 3 weeks for stronger more sour taste.

A new baby scoby will form ontop of the mother one, connected umbilically on the side.
The mother will make kombucha around 5 times.
Then it wants to compost.
Baby ones can be given away or stored in fridge for giving away.
And become your new mother scoby.

After 2 - 3weeks, make a new batch to slip the scoby with baby/ies into.
Add 1 1/2 dl of the finished kombucha ito the new sugar tea.

Pour the finished kombucha into a jar or many bottles.
I steep it with ginger in a tea strainer ball 20 min.

If it is in a airtight bottle it will start a precess of carbonation. 
Leave some space for that, and beware of explosion!
It's my ultimate kombucha taste.
Store cold.

It will continue fermenting in the bottle.
You might have to strain it again, if scoby threads form!

Raw Vegan Kimchee


Cut 3 large heads of savoy cabbage or napa cabbage / salladskål into slivery bits, or your preferred size.
Put the cabbage into a big bowl, sprinkling and mixing it with about 3 dl of seasalt, for it to soften.
Pound it down with your knuckles, to break fibers and pack it good.
Let it stand under a plate with a weight on top for pressure for minimum of 2 hrs.
A 3l kombucha jar is good for that!
 Then rinse very thoroughly in a sieve and add:

4  carrots chopped
1 - 2 organic daikon if you have, chopped or julienned

Then mix into a paste and stir in:

4 onions 
1 1/2 dl ginger
1 1/2 dl garlic
1 dl korean chili

Redder, sweeter, better, savourier!

2 fresh red chili peppers, chopped
2 sweet pears, chopped
4 tablespoons unpasteurized miso
2 tablespoons tamari

 Add

1 bunch of chopped chives

Put in canning jars and store in room temperature 24 hours. Leave a little space on top, for it to bubble and ferment. Super sterilised is not necessary. Then store in fridge for at least 2 weeks. It keeps forever, and gets savourier and savourier. It can also be eaten fresh directly after 24 hours, save a jar for that, while you wait for the 2 weeks to pass.

Våfflor med jordgubbssylt



   
Detta är min gamla favorit efterrätt! Glutenfria!
Gör egen lagom söt jordgubbssylt:

1 pkt (250g) jordgubbar
20-25 finhackade dadlar
vatten så det inte kokar fast


Häll allt i en gryta och låt det småputtra en 20 min medan du gör i ordning resten.

För grädden ta per person:
2 msk citronsaft
1 dl sojagrädde

Häll sakta ner grädden i citronsaften medans du vispar. Lätt, billigt och fräscht! sedan kan du göra våffelsmeten. För 10 våfflor tag:


3 1/2 dl glutenfrittmjöl
2 tsk bakpulver
4 1/2 dl gräddmjölk (0,75 dl soja + 3,25 dl vatten)
1 kryddmått salt
1 dl rapsolja, gärna kallpressad

Vispa ihop det torra och sen med gräddmjölken och sist den guldgula rapsoljan. Värm ditt järnvåffeljärn o smörj med rapsolja. Häll 0.75 dl smet i järnet och grädda.
Servera med grädden och jordgubbssylten.

Sweet Chipotle Tomato Soup with Corn



I had a new raw recepie vision last night, made it and it's absolutely delicious!
I had been looking at a chili recepie, I have fresh corn, the first of this season, and I wanted too make something delicious. I'm also inspired by Jinjee's pizza tomato sauce based on sundried tomatoes and agave. This soup is sweet, hot, black peppery and tomatoey. Here goes per person:

2/3 of the corn of a cob

Then mix:

9 sundried tomatoes soaked in water, if salty, no need to add the extra salt
 2 soaked dates
1 1/3 cup / 3,5 dl of water, including the soaking water
pinch of minced chipotle chili
1/8 teaspoon black pepper, optional
1 tablespoon canola /raps oil
1 tablespoon olive oil
salt

Pour it over the corn, mix, you can grind a lot of black pepper over and decorate with sprigs of parsley. I'm having a parsley iron craze now, so I chew 4 sprigs on the side, one big munch with every spoon of soup. Mmmm, hot, end of summer, darker evenings, Sweet Chipotle Tomato Soup!!!

RAW Lasagna


It was time for something new after a week of 
OTW out of this World Korean Rawfood

Lasagna!

Best of 5 recepies:


Thinly slice zucchini, salt very lightly, spread out the salt over the slices with your fingers to soften

Marinate mushrooms in oliveoil, a little tamari and chopped garlic

Wilt and marinate spinach in oliveoil, seasalt, freshly ground blackpepper


Mix cheesesauce mozzarella style
cashews soaked (4-6 hrs) and rinsed, a bit lemonjuice, salt, water to not quite cover

Mix tomatosauce
Tomato, sundried soaked tomatoes (if salty add no salt), olive oil, fresh basil, garlic, chopped date

Slice a juicy tomato

Start composing!

Korean RAW Food



Taeyoung Han surfed my couch 3 weeks ago, and we got all into rawfood together. In Korea, people want traditional healthy korean style rawfood, not the western often nutty, fatty, sweet rawfood. She translated the korean rawfoodblogs, f. ex. 뀨 Gjus, http://blog.naver.com/tladpskwmf  for me.

The food was out of this world OTW delicious : ) , I just wanted to eat it all the time, so I went 100% raw. It was so easy, my body just wanted to keep doing it.

Here are the recepies that changed my life:

Cucumber Noodle  비빔 냉면  Bi Bim Naeng Myun


Bi Bim Naeng Myun  비빔 냉면  mixed cold noodle
It's a Namul - a side dish

You need 1/2 cucumber sliced with a potato peeler - for the most savoury slices
1/2 onion thinly sliced verticallly
some wild greens, dandelion, yarrow, plantain or spinach, a bit chopped

Korean hot, mild, sour, salty and sweet sauce:
3 T(ablespoons) Red Korean ☆ Chili Powder
2 T apricot extract (3 soaked apricots miwed with a bit agave syrup)
2 T balsamic or raw rice vinegar
2 T sesame powder or whole sesameseeds
1 T tamari
1 T lemon juice
1 T ginger finely chopped
1 T garlic finely chopped
a pinch of pepper and seasalt
agave to taste

per person


Mix


With this we made

Nori Roll 김밥 Kim Bap  


Place 2 unheated black nori sheets on top of each other on a nori rolling mat
or 1 if it doesn't crack
Put 1 1/2 - 2 leaves of a good lettuce on the lower half - broken in pieces to fit
Put quartered cucumber along the middle of the lettuce horizontally
Put 1/2 carrot finely mixminced below the cucumber horizontally
Put 1/2 beetroot finely mixminced above the cucumber horizontally

Then roll the nori roll slowly and pressing down into the middle tightly as you roll
Put water on the last centimeter to glue it together and let it rest on the splice



 The magic is in the sauce that goes with it


make the sauce that goes on each nori piece, as much as you can pile on top of it

3/4 Avocado per nori sheet roll - 8 pieces
1 T apricot extract (2 apricots mixed with 3 T water)
1 T balsamic or raw rice vinegar
1 T tamari
1 T lemon juice
1 pinch of ginger finelychopped
1 pinch of garlic finely chopped
seasalt to taste

Mix

Avocado is very expensive in Korea - 4 € a piece, non organic - so this can be western inspired

Cut the nori roll that now has settled into itself into 8 pieces with a sharpened knife

8 pieces for one person, or a side dish for 2 




Cabbage salad kimchee style 양 배 추 겉절이 Yang bae chu keot cheo lyi

cabbage briefly fermented on the surface
It's like the simplest cheapest climate smartest salad or snack ever
It travels easily in your backpack during the day
It's highly addictive - like kimchee


You chop fresh or regular cabbage into nice chunks and salt them lightly.
Add some chopped ginger and garlic - half and half
Shake it in a container and let it sit for 1/2 hour or a day
in room temperature or in the sun
to get the fermentation going

I added some Red Korean ☆ Chili Powder, for deliciousness

The longer you let it sit - the softer the cabbage
The salt softens the cabbage and draws out the cabbage juice
that mixes with the gingergarlic flavour creating a new taste



  Red Chili Powder 고 춧 가 루 Kochu Garu

Is absolutely necessary. It is sweet, mild, hot and very well rounded in taste.

It also adds a nice red color, more so than other chilipowders.
