A light and hearty lunch!
2 - 3 big florets of cauliflower
a big kale leaf
a big tomato
1/3 red onion
7 cm of cucumber
lots of parsley
fresh mint
1/2 lemon's juice
3/4 dl olive oil
herb salt
Chop and dice all the veggies and season with juice, oil and salt. I like to eat a bit without salt first, and then add it. The original tabbouleh has parsley as the main ingredient!
Try adding a little soaked (4 hrs) or sprouted (24 hrs) and rinsed quinoa seeds for crunch and energy!
