Homemade Wagamama teriyaki fried tofu ramen soup


It's to expensive to eat out everyday my stomach craves this ramen soup, so I had to copy the recepie! 
Here comes:
Fry 8 pieces of tofu, in 3x3 cm squares, 1cm thick in plenty of canola/raps oil, until golden brown on both sides. Cook 100g flat rice noodles (king soba makes organic noodles, sold at Goodstore) in 7dl of water for 3 min. Pour trough sieve into another pot, saving the remaining water. Rinse the noodles with cold water to prevent further softening, and put in the serving bowl. 

Reheat the remaining water, add 1 clove of minced garlic, the same amount of minced ginger, a cube of bullion, preferably marigold organic Swiss vegetable bouillon low salt glutenfree. It can be found at Goodstora and Gryningen. Add 1/3 dl of tamari (Clearsprings tastes very good), 1 1/2 tsp agave syrup, 1 tsp brown rice vinegar (Clearspings at Goodstore or Gryningen) and some blackpepper.

Add some broccoli in small pieces, sliced carrot, sliced cabbageleek cut into 2 cm chunks, kale or whole leaf spinach and sugarsnaps if you find organic. Boil for 2-3min. Pour over noodles and top with the tofu squares! Garnish with maché or fresh spinach leaves and enjoy with chopsticks and a chines ceramic spoon, or if you can find a big japaneese wooden soup spoon.
